Harold Wilken and his son Ross are 4 th and 5 th generation farmers in Northeast Illinois. One day
Harold decided he had shipped his last truckload of wheat out of state to feed chickens.

Hebegan making plans for what would become a state-of-the-art, certified Organic, stone-milled
flour facility. In addition to his grain, Harold mills wheat from other farms around the Great
Lakes Region.

Products range from ancient grains like einkorn, emmer and spelt to gluten free
